Sitka dinner series focuses on healthy eating

Garlic scapes, growing in a garden in Sitka in 2024, are a healthy and tasty addition to nutritious meals.
The University of Alaska Fairbanks Cooperative Extension Service in Sitka is hosting three dinner classes focused on healthy eating during March, which is Nutrition Month.
The classes will be led by Paula Veshti, a dietetics student at the University of Alaska Anchorage, who is providing nutritional services and education to the community through a series of cooking classes.
On Saturday, March 8, Veshti will prepare a paleo-inspired meal and dessert. Paleo dishes, which contain no gluten, dairy, refined sugar or refined oil, are considered anti-inflammatory.
On Saturday, March 15, she will feature recipes targeted for diabetics, prediabetics and anyone who wants to learn how to manage blood sugar levels and balance meals with protein and fiber to control insulin spikes.
On Saturday, March 22, Veshti, who is part Italian and Albanian, will focus on the food she grew up eating. She will create a heart-healthy dish that is inspired by the Mediterranean diet, a whole-food diet filled with fruits, vegetables, good-quality meat and seafood, whole grains, and legumes.
Each dinner is from 5 to 7 p.m. The March 8 and March 22 dinners will be at the Sitka Lutheran Church kitchen. Please use the back entrance to the church on Harbor Drive, as the front door will be locked. The entrance is located down a one-way alley, and limited parking is available. The March 15 dinner location will be announced at a later date.
The cost is $35 for each dinner or $90 for all three. Registration is limited to 10 people for each dinner.
